做法:春(chūn )笋切成(chéng )片后加少许盐捞出后用清(qīng )水浸泡,生姜(jiāng )切片,葱切成段。锅(guō )烧热,倒入2勺油,放入生(shēng )姜(jiāng )、春笋、牛肉片、葱段翻炒1分钟(zhōng )左(zuǒ )右。再加(jiā )入生抽、老抽、蚝油翻炒均(jun1 )匀,加入少量清(qīng )水(shuǐ )半掩住春笋,盖(gài )上锅盖大火煮开后转中火。煮到水快熬干的时(shí )候加入盐,翻炒均匀稍收汁时盖上锅盖焖。
