做法:春笋切成片(piàn )后加少许盐捞出后用清水浸泡,生(shēng )姜切片,葱(cōng )切成段。锅(guō )烧热,倒(dǎo )入2勺油,放入生(shēng )姜、春(chūn )笋、牛(niú )肉片、葱段翻炒(chǎo )1分(fèn )钟左右。再加(jiā )入生抽、老抽、蚝油翻炒均匀,加入少量清水半掩住春笋,盖上锅盖大火煮(zhǔ )开后转中火。煮到水快熬干(gàn )的时候加入盐,翻(fān )炒均匀稍收(shōu )汁时(shí )盖上(shàng )锅盖(gài )焖。
